KUMARA SALAD

KUMARA SALAD

This recipe is from a dear friend and chef I met working on a super yacht many years ago. It is still my most favourite salad to this day!

DRESSING - 

4 tablespoons ginger
8 cloves of garlic
1 cup basil leaves
3/4 cup fresh lime juice
3/4 cup olive oil
4 tablespoons wine vinegar
4 tablespoons tamari
4 tablespoons diced, spring onions
Salt and pepper to taste

Place all ingredients in blender and process until smooth.

SALAD - 

4 large kumeras
6 avocados peeled and stoned
8 quartered tomatoes
1 small cucumber
4 spring onions
8 tablespoons of pickled ginger
4 cups of rocket leaves
 

Preheat oven to 200 degrees.

Peel and cut kumera into 3cm pieces. 

Season with salt and pepper and drizzle with oil. 

Roast for 15-20 minutes.

Cool and combine remaining ingredients in large bowl.
