ALLA SCALINI'S EGGPLANT PARMIGIANA

An Italian restaurant located in Cobb County, Georgia is famous for it's eggplant parmigiana, which is 'guaranteed' to induce labour in pregnant women. Almost 300 baby pictures line the walls of the restaurant from women who have given birth within 48 hours of consuming the famous eggplant parmigiana!

INGREDIENTS - 

3 eggplants
1 cup flour
6 eggs, beaten
4 cups fine Italian bread crumbs
Olive oil
8 cups of marinara sauce (see below) 
1/2 cup grated romano cheese
1/2 cup grated parmesan cheese
1 1/2 pounds mozzarella cheese, shredded
2 cups ricotta cheese

MARINARA SAUCE -

2 tablespoons chopped garlic
3 tablespoons olive oil
8 cups chopped tomatoes
1 onion, chopped
1/2 fresh, chopped parsley
1 teaspoon oregano
1 teaspoon crushed red pepper
1/8 cup fresh, chopped sweet basil
Pinch of thyme
Pinch of rosemary
1 teaspoon of salt
1 teaspoon of black pepper


INSTRUCTIONS - 

1. Slice eggplants into 1/4 inch thick slices

2. Place the eggplant slices on a layer of paper towels and sprinkle with salt. Let them sit for an hour

3. With each eggplant slice, rinse salt off, dust with flour, dip in beaten eggs and coat with breadcrumbs 

4. Sauté in preheated olive oil on both sides until brown

5. In baking dish, alternate layers of marinara sauce, eggplant slices, ricotta, parmesan and Romano cheeses until the baking dish is full. Sprinkle with mozzarella cheese and bake for 25 minutes on 375 degrees. Let sit for 10 minutes before serving.
