ROASTED PUMPKIN SOUP

ROASTED PUMPKIN SOUP

INGREDIENTS - 

1 leek, diced

1 red onion, diced

3 large mushrooms, diced

2 garlic cloves, diced

1/2 pumpkin, diced

2 carrots, diced

1/2 cauliflower, diced

1 can of coconut cream

2 stock cubes, dissolved in 2 cups water

 

METHOD - 

  1. Fry red onion and leek in large pot
     
  2. Oven bake vegetables for 15-20 minutes on 180 degrees
     
  3. Add vegetables to pot
     
  4. Pour in coconut cream and stock water
     
  5. Simmer for 15-20 minutes
     
  6. Blend and let cool for 5 minutes before eating
